Serves 8

Ricette• 200g bitter sweet (dark) Swiss Chocolate
• 7 eggs separated
• 2 Tbsp Sugar
• 300ml whipping cream
• dash of salt
• 1 Tbsp Kirsch (optional)


1. Break the Swiss Chocolate into pieces and melt in a bowl set over a pan of simmering water. Allow to cool a little.
2. Beat egg whites with salt and sugar until stiff.
3. In a separate bowl, beat whipping cream on high speed, until stiff.
4. Add egg yolks and Kirsch.
5. Combine with cooled melted Swiss Chocolate.
6. Gently fold in snow mixture.
7. Spoon into dessert cups.
8. Chill until cool and firm.
